Have you had the opportunity to taste the culinary treat known as dinosaur barbecue ribs? This is a delicious cut of beef perfect for marinating and grilling. Read on to learn more about what it is and how to try it for yourself.

The dinosaur rib comes from the back section of a cow’s rib cage, toward the backside. A single bone can measure one foot long. It’s also considered part of the brisket, a cheap, tough, fatty meat. It can be difficult to obtain this cut of meat (because of inconsistencies in labeling depending on where you live and the grocery store you shop at), but if you do, you will be thrilled with the texture and flavor of the meat after it’s cooked. Back ribs (also known as spare ribs) are longer and have a higher fat content than the more commonly sold short ribs (taken from the cow’s plate section, under the ribs and considered part of the belly), but are also lower in cholesterol. The higher fat yields a more flavorful cut of meat when cooked, and dinosaur ribs also have more uses than short ribs, which are typically only braised (and possibly grilled after braising). Both cuts provide roughly the same amount of protein per serving, but short ribs have higher Vitamin B-12 content, and spare ribs have higher Vitamin B-6. Spare ribs are slightly more nutritious, but if you only enjoy spare ribs occasionally, your overall health will be fine, and the higher flavor is well worth it.
